This coffee is grown and processed by very small farms in Timor Leste, a tiny country at the Eastern end of Indonesian islands. These farms band together under the umbrella of Cooperativa Cafe Timor (CCT) to pool their resources and have access to latest cultivation, harvesting and processing techniques. This also allows them to jointly obtain USDA Organic and Fair Trade certifications.
The farms are in the central highlands of the country with ideal altitude and conditions for coffee growing.

We roast this coffee to the darker side to bring out its dark chocolate intensity with notes of spice and dried cherry and a creamy mouthfeel.
This coffee works well with immersion methods like French Press or Aeropress but is versatile enough to work with any method you want to use.
